Twice in the last week we’ve had fresh ground burgers the way Don Thomas described in the latest issue of TBM. Tell ya’ what! A slab of homegrown tomato, some homemade pickles… that’s an unbeatable burger! I threw a few fresh mushrooms in with the grind tonight, and man did we eat. Thanks, Don! This meal is a major hit with my family. 🙂

I’ve enjoyed two wild game meals at Don and Lori’s, and both were five-star quality. Like most great cooks, he loves every aspect of it and views the preparation time, with ample wine, as prime-time for great conversation. While I can’t stomach some of the things they love — sea snails? — he is a true master chef and I look forward to another great meal there someday. They should definitely write a wild game cookbook as I’ve never yet found one that goes beyond the basics. That’s a hint, you Thomases. 😀

And there’s no better way, in my opinion, to pay respect to an animal you’ve taken than by making the most amazing meal you can with it.

Apologies for the late reply… I’ve been delightfully off the grid up north in AK and will soon be again as my 92 year old father is in the ICU in Seattle and we’re making an emergency trip that way tomorrow. Anyway, I’m glad the burgers worked for you, and yes: one of these days we’ll get to that game cookbook. And Dave, those were sea cucumbers, not sea snails. Maybe the wine made you forget. Don

Yes, a game cookbook please. I volunteer to taste all of the entrees. 😀
In the mean time was the Don Thomas burger recipe among these posts? If not please post it and I’ll get the grill going.

There was an article in the Traditional Wisdom section of the Oct/Nov issue (page 68 & 69) but I’ve posted the article Building A Better Venison Burger as a pdf file for you. It’s more than just a recipe so this seemed easier.
Our thoughts and prayers are with Don and Lori, and Don’s family this morning.

Thank you all for your concern. Lori and I just returned from our ninth trip to Seattle this year. Dad remains hospitalized. The cardiac procedure that was scheduled this week was postponed until next week. Things are not likely to go well. Again, the family appreciates your support. Don
